This recipe is far from perfect, but it is pretty good and super simple. You will need a high power blender or food processor in order to make this. Falafel are amazing, super light yet full of protein. They are versatile as they can be added to salads, burgers, wraps, or eaten on their own with some veggies and fruit on the side. 1/2 can chick peas
1 clove garlic
1/2 teaspoon lemon juice
Handful of parsley
Salt and pepper
Dash of tahini
Add the chick peas to a food processor and pulse until mixed
Add garlic, parsley, s&p, and lemon and pulse until combined. If you have a crappy food processor (like me) then you may have to do this in batches and add the mixed portion to a bowl until it is all finished.
Once the mixture if finished I added a dash of tahini and mixed before forming into balls. I rolled the chickpea mixture into small balls and flattened onto a parchment paper lined sheet.
Bake for 20 minutes at 350-400.
This recipe can be doubled if you wish to make more. I got 6 falafels Which is perfect for me as it gives me left overs for lunch the following day. This could be an easy meal prep recipe as you could double the recipe and make enough to have for the week!
